Goan Tempero Cheiroso
A flavourful spice mix that can be used for Meat and Vegetable preparations. I keep two versions of this spice mix on hand. One where all the ingredients are dry roasted, and the other where they are ground without roasting. Roasting enhances the flavours of the individual spices, and dramatically changes the end result. 


Ingredients:
3 tablespoon coriander seeds
2 tablespoon cumin seeds
1 tablespoon peppercorn (black pepper)
40 cloves
20 cardamom
6" cinnamon 
1 1/2 teaspoon turmeric powder

Directions:
1. Grind all the whole spices to a powder. If making the roasted version, individually dry roast the spices prior to grinding them.

2. Mix with turmeric powder.

3. Store in an air-tight jar.

  1. I tried out both the recipes, the goan pork roast with the goan tempero-cheiroso. Firstly it was AWESOME!!
    I have only one comment, the kashmiri chillis added flavor but the dish lacked spiceness.
    Do you have any suggestions?

  2. I have come t o the stage of drying the pork meat for chorizo.can I sun dry the meat on my terrace or should it be air dried only. Also after adding the masala do I keep to marinate inside by air drying or can I dry the masala mixed pork in t he sun. I do not have casings so Will zip lock t he same and freeze. Please let me know as soon as possible as I have kept t he pork to air dry on my dining table. Thank you
