Kothmir (Coriander) Chutney

Goan Kothmir Chutney
A popular snack in Goa, Bombay and many other parts of India, presenting the humble green chutney. Traditionally this chutney is served with bread and butter as a sandwich. I decided to go with a new take on the old classic. Enjoy!


Ingredients:
1 large bunch of coriander leaves (remove as many stems as possible)
1 cup fresh or desiccated coconut
2 green chilies (use more if you want to add more spice)
1 teaspoon coriander powder
1/2 teaspoon cumin powder
1 teaspoon ginger/garlic paste
2 tablespoon lemon juice 
1/2 teaspoon sugar
salt to taste


Directions:
1. Prep your spices before you begin to save time.



2. Grind all the spices to a thick paste (with the exception of salt and sugar).




3. Traditionally chutney is served with bread and butter as a sandwich. I decided to go with a new take on the old classic. 


Note: Let the Chutney age for a day or so in the refrigerator. The flavours really pop and the chutney becomes thicker.
