A popular street food or snack in Goa where an omelette is doused in gravy and served with a garnish of onion, cilantro and lime or lemon. The gravy would typically be a spicy Chicken, Mutton or Vegetarian gravy. In this particular case I used some leftover from my Pork Roast.
|Goan Ros Omelette|
1/2 onion (chopped fine)
cilantro for garnish
wedge of lemon
salt to taste
1. In a bowl, beat the eggs, 1/4 onion, chili, some cilantro and salt.
2. Heat some oil in a pan, and fry the omelette.
3. Plate the omelette and pour the gravy over it. Garnish with the remaining onion, cilantro and lemon. Serve with a couple slices of bread.
