Banana whole wheat Muffin
30 Minute Banana Muffins
30 minutes, that's all it will take you from start to finish with these delicious and healthy whole wheat banana muffins. My daughter and our neighbours kids loved them. Try them with your kids too, or even as a grab-and-go snack for yourself! :)



Ingredients:
1 3/4 cup whole wheat flour 

1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup olive oil
1/2 cup honey
2 eggs
1 cup ripe bananas (3 or so, mashed into chunks)
1/4 cup water

Note: For an Eggless version of this recipe, add another 1/2 cup of pureed bananas instead of the 2 eggs. It will replace the eggs, while boosting the banana flavour of the muffins.


Directions:
1. Mix all the dry ingredients together in a bowl.



2. In a separate bowl, whisk together the oil and honey.



3. Add one egg at a time while continuing to whisk the mixture.



4. Add in the dry ingredients and mix well.  Add in the mashed bananas last and mix together. Do not over mix at this point, as you want to end up with a slightly chunky mixture. Add some water if the mixture is too thick.



5. Spoon or pour the mix into a muffin pan.



6. Bake in a 325F oven for around 20 - 25 minutes until golden brown.



7. Let the muffins cool in the muffin pan for around 10 minutes, then remove them to a cooling rack. Serve warm as they are or with a sprinkle of powdered sugar and/or a drizzle of honey.
